These days cauliflower is available throughout the year. But we do find very fresh cauliflower winter and I buy them only when they are fresh. A reader asked me for restaurant style cauliflower kurma recipe. I have never tasted a cauliflower kurma in restaurants till date. So while this recipe may not be a typical restaurant style cauliflower kurma recipe, it is a very delicious and easy one. I can tell you this will be the best cauliflower kurma recipe to make at home.

As I mentioned above cauliflower is our favorite vegetable and I make different cauliflower recipes like veg stew, cauliflower masala, cauliflower curry, cauliflower gravy, gobi 65 etc. I make this cauliflower kurma recipe as side dish for roti. This also tastes good with steamed rice and raita. Unlike many kurma recipes there is no coconut in this cauliflower kurma recipe. This is made with cashew paste. The cashew paste adds a very rich, creamy and subtle taste to this cauliflower kurma recipe. This tastes delicious when served hot.

To make cauliflower kurma recipe, first let us prepare the cauliflower. You can either deep fry or shallow fry the florets. I always shallow fry the florets.Other than cashew paste I have used regular spices like turmeric,coriander powder and garam masala. Instead of garam masala you can use whole spices too. You can even use kitchen king masala. This is a vegan cauliflower kurma recipe. I have not used any cream or milk in this cauliflower korma. If you need you can add some fresh cream towards the end. You can also soak and grind cashew in milk. But cashew paste itself lends a very rich and creamy texture to this korma. You can keep the consistency of kurma as per your preference. This is a very tasty and flavorful side dish for roti, dosa etc. I even serve tis cauliflower kurma with dosa.

Step by step cauliflower kurma recipe

1. Wash and cut the cauliflower florets into bite size pieces. Parboil the florets with little salt and turmeric powder. Drain and set aside.

2. Soak the cashews in water or milk for 15 minutes.Grind the cashews into a fine paste.

3. Heat oil in a shallow frying pan and shallow fry the cauliflower florets till they turn slightly golden. Remove to a kitchen towel and set aside.

4. In the same pan,temper with cumin seeds. Add the crushed ginger and slit green chillies. Saute for 3-4 minutes.

5. Add the sliced onions and saute till transparent. Add the finely chopped tomato and saute till mushy. Add 1/2 cup water and mix well.

6. Add turmeric powder,chilli powder,coriander powder and mix well. Cook for 3-5 minutes.

7. Add the cashew paste,salt and mix well. Add 1 cup water and cook in medium flame for 12-15 minutes till the gravy thickens.

8. Now add the cauliflower florets and mix gently. Simmer for 5 minutes.

9. Add crushed kasuri methi and remove from flame. Serve cauliflower korma hot with rotis.

  • 1 medium sized cauliflower
  • 1 large onion finely sliced
  • 2 large tomatoes finely chopped
  • 10 whole cashews
  • 2 green chillies slit
  • A small piece of ginger
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon chilli powder
  • Salt
  • Kasuri methi
  • Oil

Instructions

Notes

1.Instead of garam masala you can saute whole spices like cardamom,cloves and cinnamon in oil along with green chillies.
2. Along with cauliflower you can also add shallow fried potato cubes.
