Deliciously cheesy and tomato rich and even non Tuna lovers would love this.

I eat Tuna about once a week, that is one can a week, with a little Trim (lightened Mayonnaise) mixed in on low GI brown bread.

Sounds a bit boring, but I still love it ! And besides I am still losing weight consistently. Since beginning of April I have lost almost 8 kilograms ( about 18 pounds ).

Anyhow, we have several cans of Tuna and I felt like having a breakout (to crook!). I only have a breakoutonce every two weeks or so.

My family loved the Tuna Melt Nachos, although hubby did mention that the Nachos were not crunchy but softened. It is supposed to be that way.

However I think next time when we have it as a snack, I will omit the Nacho layers and serve them on the side. The cheesy Tuna will make a wonderful dip.

The Nachos on the sides of the oven dish were still crispy, which gave me the idea to use the Tuna Melt as a dip next time. I can actually do with some more seafood/fish dips anyhow.

Served for lunch or a light dinner, this recipe is more than enough for 4 adults, with maybe a small crunchy salad on the side.

Benefits of Tuna :

  • Use the Tuna in Water (drained), not the Tuna in Oil and it is great for weight-loss – Tuna in Water only contains 1 gram of fat and 100 calories per serving
  • Provides a good dose of iron and potassium, however do not eat canned Tuna every day, due to the mercury content
  • Tuna contains omega-3 fatty acids which helps with various heart related problems i.e. reducing cholesterol and lowers blood pressure
  • It reduces depression and stress
  • The Vitamin D strengthens your bones ( perfect for all of us stepping on in years! )

All the ingredients can easily be doubled if you want a bigger batch, just remember to use a larger dish as well.

You can use plain Tortilla chips or Cheesy. I wouldn’t recommend any strong flavored Tortilla chips as it might clash with the overall taste of the cheese, tomato Tuna.

Ingredients

  • 1 TB Olive Oil extra virgin
  • 1 Red Onion finely chopped
  • 1 t Fresh Garlic crushed
  • 1 can Chopped Tomatoes ( 410g = 14 oz )
  • 1 t Sugar
  • 2 cans Tuna in Brine/Water drained ( 1 can = 170gr / 6 oz )
  • 1 small Bunch Cilantro roughly chopped
  • 200 g Tortilla Chips plain or cheese ( 200g = 7 oz )
  • 1 ½ cups Cheddar Cheese grated
  • 1 ½ cups Guacamole ( homemade or store-bought )
  • 2-3 Spring Onions chopped
  • 1-2 Green Chilies sliced
  • extra Coriander Sprigs to garnish ( optional )

Instructions

  • Pre-heat the oven to 220 deg C ( 440 deg F ) - spray a 15 x 30 cm ( 3 x 6 inch ) ovenproof dish with cooking oil

  • Heat the Oil in a large skillet - saute the Onion until soft - add the Garlic and cook another minute

  • Stir in the Tomatoes, Sugar, Tuna and chopped Cilantro - cook 2 minutes - check seasoning and remove from heat

  • Place half of the Tortilla Chips on the bottom of the oven dish - spoon over half the Tuna mixture, followed by half the Cheese - repeat the layers

  • Bake 10 minutes or until the Cheese has melted - remove from the oven

  • Dollop over the Guacamole and sprinkle over the Spring Onions and Chilies. Garnish with Coriander sprigs and serve immediately

Notes

The Tortilla chips will soften - this is supposed to happen, to create almost a lasagna like dish
