Baked Garlic Green Beans are a simple anddelicious side dish that will complimentany main entree. Crunchy green beans and roasted garlic, make this one easy yummy side!

Everybody loves veggies right?? Wrong!! I am not a huge veggie fan and I hate that I am so picky. I absolutely adore my husband for putting up with me because he only gets a select amount of vegetables in our house.

When wegot married 15 years ago (wow that’s a long time), I never cooked with fresh vegetables. I never cooked period, but that’s not the point of this post today, hehe. Ialways threw a can of veggies in a pan and warmed that up for dinner. But things are different now andI’m exploring more with fresh vegetables.

Mom used to always make canned green beans when we were kids, so I knew I liked the canned version. I never knew if I’d actually like fresh green beans. I instantly feel in love with them when I tried them for the first time. They’re so easy to cook with and soo very very yummy. You can never go wrong with green beans.

I think every one likes them. I wanted to share this recipe with you all today because Christmas is literally days away and I thought you all might need a simple, 4 ingredient side dish. I know I’ll be slaving away in the kitchen making the appetizers, mains and dessert. The last thing I need to worry about is what side I’ll be making.

This recipe is fool proof and is perfect with chicken, fish or steak dinners. No matter what you’re cooking this holiday season, or for dinner this dish will accompany it perfectly.

Ingredients

  • 1 to 1 1/2 pounds fresh green beans, rinsed and ends cut off
  • 4-5 cloves garlic, chopped or minced
  • sea salt & pepper, to your liking
  • 1-2 tsp olive oil

Instructions

  • Preheat oven to 350 F degrees.

  • Place green beans in a large bowl.Pour olive oil over green beans and toss.

  • Sprinkle with salt, pepper and garlic over green beans. Pour onto baking sheet.

  • Cook for 17-20 minutes, checking and tossing half way through cooking process.

  • Serve immediately & enjoy!

  1. Green beans are one of my favorite veggies! My husband is picky about his vegetables, but luckily, he loves green beans. And we both LOVE garlic, so this version was made for us. So easy, too! Love this, Cyndi! And great video! 🙂

    I’ve always heard that roasting veggies was easy, but it doesn’t seem to work for me! I made the Baked Garlic Green Beans for dinner, this evening & was kind of disappointed in how they turned out. I felt they were too crunchy, after baking for 20 minutes. I think I needed to put more salt & pepper on them, as they didn’t have much flavor. Help! ?

      Hi Gayle. I’ll totally help you out. I’m sorry that the green beans were to crunchy. Next time try to cook them for another 5-10 mins. Since ovens can vary that could be a factor. Also I would try using a little more olive oil. Make sure those green beans are coated. And yes to the salt, pepper and garlic. That’s what makes these green beans so tasty. I hope you try them again and let me know how it goes. I’m happy to help. 🙂

    If you want softer green beans, blanche in boiling water for 2-3 minutes, until bright green in color. Plunge into ice water to halt cooking. Now continue on with recipe as written. Beans will be fork tender and not crunchy!

      Hi Darlene, I’ve never tried using frozen beans before so I can’t tell you for sure it would work. My concern would be that the beans might become mushy. Fresh green beans are the best way to go with this recipe. Please let me know if you end up trying it with frozen green beans. Now you have me curious. Thanks! 🙂

    Can this be made ahead I am bringing them to dinner but at someone else’s house which is an hour away was just going to prepare them and back when I arrive but wasn’t sure if they would be too soggy

      Hi Sabina, I wouldn’t suggest making them ahead of time, they will turn soggy. I recommend preparing them at your house and then simply baking them when you get to the persons house. Hope this helps. Let me know if you have any more questions.
